In the list of stocks, tap Edit, then the plus (+) button to add a stock, index, bond, ETF, mutual fund, currency pair, cryptocurrency, commodity etc.

Then search by company name or symbol and the list of search results will update in real time as you type. Make a selection and the symbol will be added to your active Watch list or Portfolio.

Please note that you can bulk add many stocks from this screen. For example, after adding AAPL you may clear the search field, enter another symbol and add it to your portfolio without coming back to 'Edit Stocks' screen. All symbols added on the 'Add a stock' will be located in your current portfolio after tapping 'Done'.
